We pride ourselves in upholding the same quality standards for selecting our decaf as we do any other coffee purchase. Our goal is that you taste it and say "this is a decaf?!"
This coffee is ethyl acetate (EA) decaffeinated: this naturally occurring ester (a by-product of fermented sugars also present in bananas) can be isolated and used as a solvent to bond with and remove caffeine from green coffee. First, the coffee is sorted and steamed for 30 minutes under low pressure to open the coffee seeds’ pores and prepare them for decaffeination. The coffee is then placed in a solution of water and EA; the EA bonds with the salts of chlorogenic acids inside the seeds. The tank gets drained and refilled over the course of eight hours until the caffeine is no longer detected. The seeds are steamed once more to remove any traces of EA. The coffee is then dried and polished for export.
Our decaf is an origin select blend of: Castillo, Caturra, and Colombia.
