Located only 8 km from the city of Carmo de Minas, on the foothills of the Mantiqueira Mountains at 1,000 - 1,375 MASL, the Pico Agudo Farm has a rich natural surrounding, with many water springs and fertile soil, appropriate for specialty coffee growing.
All the beans go through a mechanical washer that separates sinkers and floater beans. The sinkers then are taken to a pulping machine which separates the unripe cherries from the ripe ones, giving us the pulped naturals. All the batches are conducted separately to different patios for sun drying until they reach 14% of humidity finally, to achieve 11% they go through mechanical dryers for a more consistent and even drying.
