Located in the Cauca region of Colombia, the Manos Juntas micromill is operated by our friends at Banexport. Coffee cherries are purchased from the local producers by weight which encourages better harvest practice, as the riper the cherry the heavier it is. Banexport also pays producers upfront for the coffee at a premium price well above the market value. The premium is reinvested into collected infrastructure. Because Banexport manages the sorting, processing, drying, and storing, producers can focus on maintaining healthy coffee farming, without having to worry about the hassle and cost of post-harvest production.
This coffee was anaerobically fermented for five days, with Brix and pH monitored closely. During this process, nitrogen gas is charged into the tanks to stimulate the yeast. After fermentation, the coffee cherry is then aged for five more days before drying for up to 45 days.
We are extremely excited to be presenting this coffee in collaboration with Café Imports and Banexport. This coffee is bursting with flavors of sweet fruit. We would recommend brewing this for filter or as an espresso for an “out there” flavor profile.
