Costa Rica / West Valley
The Costa Rica / West Valley comes to us from the Cerro San Luis micromill, a farm run by a pair of two sisters and their husbands. The family’s farms are adjacent to one another, and the micromill they use is located near their shared home.
This particular coffee is a yellow honey process, a method in which the fresh coffee cherries are de-pulped, but allowed to dry without washing. Most of the cherry is gone, but the remaining golden, sticky mucilage is reminiscent of honey, which is where the process gets its name. Honey processing uses less water, and was started here in 2008 after an earthquake caused a severe water shortage.
We taste hints of caramel sweetness, refreshing lime, and delicious toffee. A smooth cup of coffee all around.
