This natural process offering comes from producer Roger Dominguez in La Paz, Marcala. Roger is a young producer who inherited his father’s midsize farms, which came into the family in the early 1990s. He has three parcels of land in Marcala, all between 3–5 hectares, at good altitude for the region, above 1,300 meters.
While natural-processed specialty coffees from Honduras are still relatively new to the market, they are increasing in popularity. Quality-focused producers like Roger are experimenting with processing due to the increased market for these kinds of coffees. Roger is one of the producers in Honduras setting the standard for specialty coffee in the region by paying close attention to his wet milling and drying.
The level of attention to detail is extremely noticeable in this coffee. Red wine and citrus acidity jump out with a dark fruit sweetness that we love in natural-processed coffees from South America.
