Peru / Cusco
The Peru Cusco comes to us from the multi-producer cooperative of Huadquiñu situated in the heart of the La Convención Valley in the district of Santa Teresa, Cusco. It is the final stop along the ancient Inca trail to Machu Picchu. The farms that importer Red Fox Coffee Merchants buy from are situated along a path that was historically used by the Inca community to evacuate and avoid attacks.
This lot was grown at a soaring altitude of 1,750 - 2,100 MASL. It is a washed blend of Typica & Caturra varietals. The high altitude ensures that pests stay away and the cooler temperatures allow the plant to slowly develop in sweetness.
It's a very balanced cup with nuances of stone fruit, including peach and apricot with notes of brown spice, pecan and panela.
It shines as pour-over, in chemex or batch brewed.
