Colombia / Nariño Microlot
Finca El Cairo is family operated farm owned by Lucas Melo. Lucas manages everything at the farm-level, including the wet-mill to the drying process. In total, the farm is comprised of 7 Ha and the predominant variety grown is Colombia F6 (one of the earlier lineages of "Variedad Colombia").
The farm sits at an elevation ranging from 1,600 meters to 2,050 meters. This microlot was produced at around 2,000 meters. The coffee is fermented for between 18-20 hours and dried on african beds, in a solar drier for approximately 8 days.
This coffee stands out for both balance and complexity. We get a yummy key lime, citric acidity over round, juicy tropical fruit notes. You'll want to brew another!
