Long are the days when decaf is considered a second-class coffee. This natural process coffee from the Silva family has gone through the Swiss Water decaffeination process. It retains the vibrant flavor and pleasant acidity that we love from natural processed coffees. This offering comes from a sixth-generation coffee producer who developed an exceptional regional select coffee exclusively for our partners at Anthem Coffee Importers.
About the Swiss Water method: The Swiss Water Process is a patented decaffeination method that uses only water to significantly lower coffee’s caffeine content. Heat and time are also employed, but clean water is the only added ingredient. But how do you remove caffeine with just water? The short answer is diffusion. The unroasted green coffee is soaked in their proprietary Green Coffee Extract (“GCE”) containing all the water-soluble compounds found in coffee, except for the caffeine. The solution is heated so the coffee beans swell, and become porous. The caffeine molecules move out of the swelled coffee and into the GCE through osmosis, while the volatile compounds that affect things like flavor and aroma are left in place.
This coffee stood out on the cupping table for its vibrancy and acidity. It truly is a coffee lovers decaf. This coffee may not taste like your average decaf, feel free to enjoy this any time of the day, while still getting a good night's rest.
