Ethiopia / Koke
The Ethiopia Koke is quickly becoming a Repetition favorite, landing on our offering listing for the second year in a row. This coffee is produced by a group of about 96 multi-generational smallholder farmers with plots of land above and below the Koke Washing Station. Koke is located in Yirgacheffe in the Gedeo Zone. Yirgacheffe has a long-established, even mystical repute in the coffee industry; literally translated as the “Land of Many Springs,” it is widely considered the birthplace of arabica coffee and is known for its abundance of coffee varieties that grow naturally in its highlands.
This coffee is sourced by our friends at Ally Coffee who have been working directly with the family-owned Koke Washing Station to help improve overall cup quality. In exchange, the Koke Washing Station separates out the higher elevation lots for Ally.
This lot is comprised of Kume, Dago and Wolisha Grade 1 varieties grown at 1,800 MASL. The Koke is honey processed, a full mucilage processing method in which the coffee rests in picking sacks for a day before cherry removal, imparting additional fruitiness to the final cup.
We taste Port wine, juicy strawberry gushers with notes of black tea and coconut. The Ethiopia Honey Koke is a balanced and smooth cup.
