Guatemala / La Colmenita
This coffee comes to us from producer Francisco Cardona Martin from the Finca La Colmenita, or "Beehive Farm". Francisco has owned the farm since 2002 and works closely with neighbor and exporter/importer, Onyx Coffee. Together they innovate to bring excellence to the cup by planting varieties known for excellence and consistently reinvesting profits back into acquiring better equipment and improving farming techniques. Francisco is not a stranger to the cupping table. He has been developing his skills in the Onyx Coffee cupping lab in Huehuetenango. This dedication to quality comes through.
This lot was grown at an altitude of 1,750 MASL and consists of Typica and Bourbon varieties. It is fully washed and was dried on a patio that Francisco built on top of his house.
We get lots of subtle fruity notes, including plum, blackberry, citrus and black tea. The coffee is smooth, round and has an underlying toffee flavor.
