Manos Juantas - meaning hands together - is a special collaboration between local farmers in Colombia's Cauca region and Cafe Imports’ exporting partners Banexport. With the mindset of simplifying tasks and responsibilities at the farm, Banexport utilizes their resources to create their own production space for drying, processing, and storing the cherries they buy locally. Because of this infrastructure, farmers get paid upfront (at a fixed rate above market value too!), and can focus on farming and producing the best quality cherry.
When delivered on harvest day, this naturally processed coffee goes through a 5 day anaerobic fermentation process. The cherry is then "aged" in tanks for a period of five more days before they are taken to solar dryers for 30–45 days.
