Finca Cristalina might be our favorite decaf yet! This beautifully balanced offering comes to us from Finca Cristalina in Filandia, situated in the heart of Quindío, a prominent coffee growing region in Colombia. The 19 hectare farm has been running for over 100 years and we passed down to current owners, Alberto and German in 2015.
They diligently sort the coffee cherries before and after the fermentation and drying process to ensure no underripe cherries sneak through. The decaf process uses the indirect solvent method, where the coffee is soaked in near boiling water for several hours. This extracts the caffeine from the beans. The beans are washed in ethyl acetate for 10 hours, a solvent that selectively bonds to caffeine molecules, which then evaporates out. The beans are then resoaked in the original slurry to reabsorb their flavor elements and coffee oils.
This decaf is a Castillo grown at an altitude of 1,450 MASL.
