This washed coffee is grown in the fertile soil of the Andean mountains at 1800 MASL in San Ignacio, Cajamarca—a semi-dry, semi-cold tropical highland of Peru. The coffee is produced by the Asociación de Productores Chirinos, a group of 153 members focused on sustainability and care for the environment. They have implemented a carbon capture project to keep environmental impact low, and also have programs in place to support women producers.
This coffee is harvested ripe and pulped the same day before being fermented for up to 16 hours. It is then washed and dried in a solar dryer before being bagged and stored for export.
