This unique coffee comes to us from “flavor engineer” Juan David Puerta, owner of SENS Coffee in the Armenia-Quindio region of Colombia, where he farms with his wife and child in a region of sweeping mountain inclines and lots of tropical fruits.
Sensación is made using a highly innovative processing method called osmotic dehydration, which was invented by Juan David Puerta himself, and his are some of the only coffees in the world made in this way.
An engineer by trade, Juan Puerta decided to leave behind his career to take a scientific approach to growing and processing coffee. Coffee production is extremely labor intensive and at the end of the day, the paycheck can be small. So, a few years into his practice, Juan David began to doubt his career change and was about to return to engineering to make a better living. Right before he threw in the towel, his coffee won second place in South Korea, thus launching his reputation as an innovator in the industry, and the Puerta family’s life was changed forever.
The osmotic dehydration process begins by putting coffee seeds into a vat where they are hit with CO2 to push the oxygen out. The oxygen from the coffee tank is released by way of a bubbler into a tank of water, which creates a liquid called “mosta” in Spanish or “liquor” in English. This liquor is then drained from the tank, at which point, Juan Puerta places tropical fruits grown on his farm in with the coffee seeds. CO2 is applied again at this point and the seeds are allowed to sit in the anaerobic container with the tropical fruits so that their flavoring is imparted by osmosis.
This natural infusion method produces subtle flavoring without any additives. Our offering is infused with lemongrass, mandarin and orange, and the final product has a creamy finish with tasting notes of melon, marshmallow and milk chocolate. This coffee is a must try!
