Sourced from smallholder farmers across the high-elevation landscapes of Huila, Decaf de Caña highlights one of Colombia’s most dynamic coffee-growing regions, where producers—most farming on very small plots—cultivate with deep local expertise. Nestled between the Central and Eastern Andes, Huila’s diverse microclimates and fertile volcanic soils shapes the character of this coffee before it undergoes a traditional washed process, including same-day de-pulping and extended open-air fermentation. The coffee is decaffeinated using the sugar cane (Ethyl Acetate) method, a natural, resource-efficient technique in which steam and a sugarcane-derived ester gently remove caffeine while preserving the integrity of the coffee. The result is a decaf rooted in careful regional craftsmanship and a process designed to respect both producers and place.
